When I first moved to Cebu, my workmates have been urging me to try out Tuslob Buwa. I asked them what it is and what made it special? They explained that it has a pig’s brain, which made it unique.
I was surprised and intrigued at the same time, so I did not miss out on trying the one-of-a-kind cuisine.
Tuslob buwa originated from Brgy. Pasil, and it means ‘dip in bubbles’ in English. You might wonder why to name the cuisine as such; This is because that is how you eat this special street food: Literally to dip in bubbles.
When you eat Tuslob Buwa, you also enjoy the experience; this is because you are the once to cook your own food. Each table has a stove where you’re given the ingredients to prepare your food.
The main ingredients for the special street food are pork brain, liver, garlic, onion, shrimp paste, and chilis. You fry the ingredients on the stove until it forms a thick stew, and then you can dip your puso (hanging rice) on your stew.
How to Cook Tuslob Buwa
- Place your burner on the table
- Put some Oil. Heat it til boil.
- Saute some onions
- Add the liver and shrimp paste (Optional)
- Add Soysauce and mix well.
- Pour the Pork’s brain and simmer for about 2-4 minutes.
- Serve and dip your hanging rice for the Best Tuslob Buwa experience.
Many food stalls are serving this cuisine, especially in Brgy. Pasil. For me, I had my first Tuslob Buwa experience at Azul Cebu. Fun fact about Azul is that they got featured on Netflix’s Street Food Asia.
